3 and 3 to Celebrate National Absinthe Day

It is March 5th and that means it is one of the best holidays of the year for the cocktail enthusiast, it is National Absinthe Day.

Three years after the lift of the ban of absinthe in the United States absinthe has found a regular place in the bar and finding its way into cocktails in some ingenious ways...It is also loosing some of its mystery among drinkers because when mixed properly it is not the scary spirit that the rumor mills have led it to be.

There are many fantastic bottles of the "green fairy" available (check out the lists on AbsintheBuyersGuide.com), these are three of my favorites...

And when it comes to absinthe cocktails, you may want to take a taste of one of these favorites...

• Lucid Garden - absinthe, cucumber, kiwi
• Rimbaud's Left Hand - absinthe, Benedictine, Aperol, pineapple, egg, rose water
• Waldorf - absinthe, rye whiskey (Templeton Rye is a great choice), sweet vermouth, bitters

St. Patrick's Day Menus:
Today's menu is from Kevin Weeks, About.com Guide to Cooking for Two.

• There is nothing more Irish than Guinness. Made using water from the Liffey River, it is one of the most famous beers (specifically a "stout") in the world. A staple of English (and Irish) pub fare is Steak and Guinness Pie, a wonderfully hearty meal on a cold and blustery March day. Be sure to buy an extra pint or two to wash down the pie.
• Corned beef and cabbage on St. Patrick's Day is an American tradition, but the Irish were long famous for their corned beef. Corning your own beef requires starting a week in advance, but it couldn't be easier to do and is far superior to what you can buy at the supermarket. And cooking it is another good excuse for a pint or two of Guinness.
